Made with 100% chardonnay grapes, some of which come from vines that are over 50 years old.  The wine is 13.5% vol.

The grapes are picked when they are fully mature and only the best bunches are used in the production of the wine.  After the harvest the grapes are destemmed, and left to macerate for a short period and then softly squeezed.  The must is fermented in  a mix of new and one year old oak barriques and is left on the lees in the barriques until a few weeks before bottling.

The wine was aged for 11 months, and the lees were stirred two or three time a week throughout this period.  The wine is further matured for at least 5 months in bottle.

The wine has a deep golden yellow colour, and a very intensive and elegant nose.  There are aromas of golden apples, pineapple and vanilla with a delicate background note of toasted hazlenut.  The full bodied palate, is complex yet elegant with peach and vanilla highlights, and a long, soft and very pleasant length.

The wine will age for more than 5 years.
